A butter that contains no animal products, no palm oil, and no plant-based substitutes—just pure, food-grade fat made from carbon in the air.


Thanks to Savor, a Bill Gates-backed biotech company that has just launched its first-ever commercial butter made from captured carbon dioxide. Savor uses CO₂, green hydrogen (GH₂), and methane (CH₄) to create fats molecularly identical to those found in conventional animal and plant-based sources.


By bypassing agriculture, this process:

Eliminates land and water use associated with traditional fat production

✅ Reduces supply chain emissions and environmental impact

✅ Delivers functional and customizable fats for food and cosmetic applications


The food industry is one of the biggest contributors to climate change. By producing essential fats directly from carbon gases, Savor is rewriting the rules of food production—making it possible to scale fats sustainably, without animals, deforestation, or extensive resource use.


Savor’s carbon-derived butter will debut in select restaurants by the end of 2025, following successful tasting events in San Francisco and New York City.
